Some restaurants are woven into the fabric of a community. Snapka’s Drive Inn is one of those places. For generations in Corpus Christi, it has been a familiar stop for comfort food, family traditions, and memories that span decades. At the heart of this legacy is Maxine Snapka, whose leadership and dedication have helped preserve one of the Coastal Bend’s most beloved local spots.

Building a Corpus Christi Tradition

Snapka’s Drive Inn began in 1948 when brothers Method and Rudy Snapka opened their first drive inn after returning from World War II. What started as a small family venture quickly became a gathering place for locals, known for friendly service and food made with care. From the very beginning, Snapka’s was built on hard work, resilience, and a commitment to serving the community..

As the restaurant grew, so did its reputation. A second location opened in Corpus Christi in the early 1950s, bringing with it menu items that would soon become local favorites. Inspired by travel and new ideas, the Snapka family introduced hard shell tacos to the area, a novelty at the time that helped set the restaurant apart. Over the years, Snapka’s became known not just for its burgers and tacos, but for its consistency and welcoming atmosphere.

Like many longtime businesses, Snapka’s faced challenges along the way. Through changing times and even natural disasters, the restaurant endured, rebuilt, and continued to serve the community. That perseverance reflects the values of the Snapka family and the leadership of Maxine Snapka, who has played a key role in carrying the business forward while honoring its roots.

Today, Snapka’s Drive Inn remains family owned and operated, a rare and meaningful distinction. Celebrating Maxine Snapka at Mi Casa Es Su Casa

Mi Casa Es Su Casa is proud to honor Maxine Snapka on Tuesday, February 18, 2026. Mi Casa Es Su Casa is a program of the United Corpus Christi Chamber of Commerce Foundation that celebrates women leaders in our community. This women-only event brings together professionals for an evening of connection, recognition, and celebrationThis women only gathering brings together leaders and community members for an evening of wine, hors d’oeuvres, and meaningful connection, complete with valet parking and celebrity waiters. It is a celebration not only of Maxine’s accomplishments, but of the role local restaurants play in shaping our community.

Proceeds from Mi Casa Es Su Casa benefit the Sister Cities Program, helping send a Del Mar College culinary student to Agen, France. Through this opportunity, the spirit of hospitality and community that defines Snapka’s Drive Inn reaches far beyond Corpus Christi.
